`The future is the worst thing about the present," said Gustave Flaubert,
which may seem a bit extreme, until you consider the case of kibbeh. For
those of you unfortunate enough to be unacquainted with them, kibbeh are
exquisite little dumplings made of a thin bulgur shell filled with spiced
meat. They are one of the glories of the Syrian kitchen; they are also, as
much as clean air or the Montreal Expos, gravely endangered by the modern
world.
