Ninety years ago, Upton Sinclair wrote The Jungle. an expose of the U.S. meat-packing industry that led to the last major modernization of our meat safety system. Now, nearly a century later, the U.S. Department of Agriculture (USDA) has finally announced new rules replacing the ancient system of sight and smell with modern, scientific methods. These rules will, for the first time, require meat and poultry processors to take steps to reduce harmful bacteria on their products.
