Henry David Thoreau might have been thinking about peaches when he said: "Live in each season as it passes, breathe the air, drink the drink, taste the fruit."
Eating seasonally teaches patience. Sure, interstate highways, atmosphere-controlled trucks and our global food supply networks deliver the instant gratification of eating peaches year-round. But who'd want to? They almost always disappoint with either too-firm or too-mushy flavorless flesh. Plus, waiting until local peaches ripen delivers a sublime pleasure that comes only after a long period of separation and anticipation.
