George Washington Irving Jr., 87, a retired chief of the Agricultural Research Service at the U.S. Department of Agriculture and a widely respected scientific researcher and administrator, died of cardiac arrest Dec. 27 at his home in Bethesda.

Dr. Irving was a biochemist by training and an authority on amino acid and protein chemistry and related fields. He began his career with the Department of Agriculture in 1942 and was named administrator of the Research Service in 1964. In that job, he was responsible for directing the work of 15,000 scientific and support personnel.
