Haven't read the play (watched a translated version about 15 years ago) but the line you mention might mean that men are very pleasant and agreeable while they try to win a woman over but once they get married (even to that person they have been trying to impress), they become indifferent, cold and negligent, maybe?

Welcome to the Forum! Hope you hang around and post more. And don't hurry to the grave, please!

Another thought is that after marriage, Roslind fears the loss of Orlando's sexual passion. The warmth of courtship done, she anticipates that once the battle has been fought, his love will cool--and she will be left abandoned.

"But oh, that deep romantic chasm which slanted
Down the green hill athwart a cedarn cover!
A savage place, as holy and enchanted
As e'er beneath a waning moon was haunted
By woman wailing for her demon-lover!"

I think it means that men are in the "spring" of their lives when they "woo" woman and are older or in the "winter" when they marry.

I think it means that when they are wooing its sort of like a game, so they are happy but things turn colder in december when they marry and then after that it says," maids are May when they are maids, but the sky changes when they are wives." This means that women are changeable and fickle like the weather and rosalind is basically trying to make Orlando see reality and jolt him out of his idea of perfect love. She also means that when you marry a woman, think about the future and how changeable your wife could be.

I think that it means when a woman is being wooed by a man that she admires, to her he is full of the promise of things unseen but sure to be and all she sees is beauty and life. But oh what bitter disappointment she feels when the chilling winds bring snow and ice to torment the days and make long the nights, and alas the naked truth is revealed.
