(leavening cultures is how they used to maintain the 'yeast' for baking bread...that's before they had the capability of dehydrating yeast to preserve it. You start with a yeast/flour/milk/sugar mixture, and you add flour/milk/sugar every five days, stirring it everyday. After 12 days you start over taking most of it to bake with)
