Lean towards omelets, my favorite being Florentine style (https://www.seriouseats.com/florenti...ach-and-cheese), though rarely now... usually 4 to 5 eggs whipped slightly in a pan prepared with olive oil with shredded cheese and curry folded in, and a bit of lite salt for further seasoning :)
