Thanks, learned a new recipe. Very easy to make and very flexible in its ingredients. For example, I would use a different seasoning with oregano and Other greenish.

Never heard about that kind of food.Seems not to be very healthy:"Concerns about Spam's nutritional attributes have been raised because it contains twice as much of the daily dietary recommendation of fat as it does of protein, and about the health effects of salt and preservatives." Can 't you maybe eat less eggs and stretch the dish with milk, cheese and vegetables ( some of the latter + greens you probably have in your own garden or may get at your church).

Hmmm... perhaps. I've taken to using shredded cheese with flour tortillas for quesadillas once in a while and was adding cheese to my eggs when I could. Prolly everyone I know extends scrambled eggs with milk... I've never cared for the taste and consistency of that method. My veggie gardens have been failures due to the many critters and bugs... Looking forward to the overflow of fruit and veg like zucchini from friends. I've been cutting back on portions... I've lost ~55 lbs /~30 kg in the last year or so by becoming more active - attaining my weight goal to that of my pre-COVID weight loss and am currently trying to overcome my new weight sticking point... perhaps with even more activity :)

I used to stretch eggs with milk when I still ate omelets and I liked the taste. But maybe you prefer porridge which is nourishing too. I think not to much weight is fine and if it's a normal weight it's healthy too, but it seems to me that you are eating less than your organism needs. Maybe you are eating more chocolate than usual because chocolate is nourishing. Some months ago I got one cold after the other because I cut down on protein. And if one gets ill that's much more expensive: doct-meds-hospital!

Zucchini salad-cook the zucchini, season them with salt, lemon juice, oil (preferably olive oil) and if you want a bit of pepper. You can add tomatoes, raw shredded carrots, olives and /or raisins.
