How hard can it be to make a lemon meringue pie? As it turns out it's very hard. This is my third attempt. First I used a premade short crust pastry, the same one I used for my pumpkin pie. That turned out pretty well I guess. However, I didn't think it worked to so well with my lemon meringue. I made quite a few mistakes first time round. I forgot to grease the pie dish.
