im thinking of stuff like the great gatsby, whose prose seems so rhythmic to me.

there are lots of examples of minimalist and detached prose. easton ellis and tao lin and his followers immediately come to mind.

I haven't read Tao Lin, but I think I know what you mean. It is hard to write prose that flows well. Although it is old have you considered Austen's Pride and Prejudice?

Pride & Prejudice is actually the book I've read most recently. I finished my reread the other day. I liked it in high school but really didn't enjoy it this time around. I found myself thinking that it should have been a play since there was so much dialogue and not really anything interesting in the prose department in my opinion.
