Am I using to many adjectives in this sentences?
“Ahmed opens a walk through iron lattice gate which isn’t even locked.”

I'm going to have to say, yes. They're all kind of piled up in front of the gate. It's a little bit confusing what is modifying what. I initially thought Ahmed was opening a walk, meaning he was starting out on a walk... through and unlocked gate, which was constructed of iron in a lattice style.
How about:
Ahmed opens the walk-through gate, which is latticed iron and isn't even locked.
Or with a change of tense:
Ahmed opened the walk-through gate, which was latticed iron and wasn't even locked.

Yes, it should be "walk-through." But I would say that the word is entirely unnecessary since we see that Ahmed is opening it.
You could also say, "iron-latticed," which would explicitly show that the lattice-work is made of iron.
I would suggest "Ahmed opened the unlocked, iron-latticed gate," or if you need to emphasize that it had been left unlocked, "Ahmed opened the iron-latticed gate, which had been left unlocked."

Or, "Ahmed walked through the unlocked gate."

I think "iron lattice" is fine, because you're describing the look. However, Ahmed opening and walking through the gate makes "unlocked" redundant, unless he and the reader had reason to believe it would be locked.

The story is taking place downtown Damascus, Syria, so yes, it would be a bit surprising to find a gate unlocked.
The part I am writing is in present time, so I think I will go with the following:
“Ahmed opens a walk-through iron lattice gate which isn’t even locked.”
And in context:
“Hassan and Ahmed carry the luggage from the car across the street. Ahmed opens a walk-through iron lattice gate which isn’t even locked. Then we walk down a cement molded staircase that leads to a small secluded patio.”

Do you get gates that are not walk-through?
Watch your adjectives throughout your writing. It is a sure fire sign of inexperienced writing to see 5 adjectives where one or two well chosen ones would suffice.
