Something that's 'off the beaten track' is something out of the ordinary, different or unfamiliar; something unusual, rare, wild, strange...

If you were walking or rambling and were sticking to the well-worn signposted paths (the 'beaten tracks') you would be staying within the boundaries of something and doing what you're told. To go 'off the beaten track' is to head off by yourself, to be unconventional and find your own path.

chicken out
v. (Slang) lose faith in oneself or courage to do something (as in "Tom was going to ask Diane out for a date, but he chickened out the last minute"); withdraw because of lack of courage or tiredness

it is interesting the word 'chicken' is used.
it could have been anything.
an ostrich would have made for a better usage since it burys its head or so to speak.

But ostriches also kick and fight, even things larger than they are, but chickens will peck at each other, but they run from anything vaguely threatening.

I like chicken. Chickens traditionally have been food for any carnivore. They are delicious and nutritious. They try to escape from anything that might have them for dinner.

Yes the ostrich would bury its head carelessly neglecting other parts of its body to be exposed, and it goes as proverb...
I don't know if there is such proverb in English as to say: Is alike an ostrich!
