Are you looking primarily for works of "postcolonial" literature or criticism regarding postcolonial works? Either way, here are a few good starting points for both. I'll add more as they come to mind.

Ramazani, Jahan. Transnational Poetics
Spivak, Gyatri. Death of a Discipline

Joyce, James. Ulysses (this might be a stretch for many, but it is assuredly a postcolonial work.
