Scott's Ivanhoe has a knight templar in it who plays a big part. I suppose a nineteenth century take on their 'mission' as it were. I'm not sure how realistic it is, though.

I'd try an amazon.com search, personally. It will be far more likely to yield a solid acidmenic resource than the personal experience of even the most helpfully inclined litnet-er.

Hmmm, I just did a quick search and it turns up maybe too much material. Maybe check the wikipedia article and see which books are cited. That could identify the resources considered standard in this field.

Also, are you going to do your research on a subject as broad as the Knights Templar, or are you going to focus on a specific time frame, event, ascpect, etc of the order? That could narrow things down for you too.

The Holy Blood and the Holy Grail by Baigent, Leigh and Lincoln has a fair bit to say about the Knights Templar and a lot else.

Oh, I didn't realise you maybe wanted non-fiction stuff. Sorry.

I agree with JBI's sugggesttions too.

J.A Froude has a short essay (originally a series of lectures) on the Templars, titled 'the Templars.'

It provides a pithy summary or their rise and fall, uncontaminated by all the drivel that has been written about them in the last few decades.

I found the essay in a collection titled "The Spanish Story of the Armada & other essays"

Search Google Books for anything by A.E. Waite. He wrote quite a few books on mysticism, the Rosacrucians, Masonry, and the Knights Templar at the turn of the 20th century. All of them should be available in PDF format for free. Also, I think the Canadian Chapter of the Golden Dawn has made all of his texts available via their website. (There are quite a few others on there as well...)
