Could anybody point me in the direction of any authors who have written fiction masquerading as an essay/fictitious essays,

My favourite would have to be "Modest Proposal" by Swift. I'd call that a fictional essay.

Sure. Aside from the obvious Swift choice:

Naked Pictures of Famous People by Jon Stewart
The Screwtape Letters by C.S. Lewis (let's be honest, they're essays)
Pale Fire by Vladmir Nabokov (the first part is a poem, the second part is an 'essay' on the poem... allegedly. This one probably most qualifies.)
