I see this in alot of literary reviews. What does it really mean? What are they looking for?

I means nothing in particular. It is just a matter of personal taste.

1.)I am not trying to be rude but "a lot" is two words, I would not mention this if not for the nature of your question.
2.) It might be helpful to read this article:

Use of language can be dry and used manly to explain, or it can be use lyrically, distanced slightly from prose. A story can be pleasureful, but the act of reading can also be pleasureful.
I would cite Lolita as an example of this.

I would say that it means very pleasing to the reader.
