So I thought this thread could be a means of discussing our favourite meals and maybe helping each other out about nutrition, cooking tips, etc..

So i've made the decision to really reduce the amount of meat I eat, which isn't a whole lot anyway. I'm really in to eating healthy and absolutely love vegetables but reading up on recipes on the internet, it seems as though a whole lot of extra.. flavouring and sauces are added to vegetarian meals almost excessively.

I'd like to stir fry some broccoli, carrots, beans, capsicum, onion etc for lunch tomorrow and aside from a bit of lemon, i don't really know what spices/sauces I can add so it doesn't taste too bland, without overdoing it. The less the better.

Care to share any healthy, simple recipes? Post below :D

this is a good idea I think, I've been a vegetarian for almost 8 years now and I don't think I'll ever eat meat again.

people think it's a big deal first and so much you have to do but I hate cooking and my meals rarely take more than 20 minuets to prepare. a favourite meal in my home is just stir fry all the veggies you like and than add to it cottage cheese, 2-3 eggs and some salsa sauce so that is the sauce for the veggies, very good...

You can try grilled pineapple,plum,or peaches

OR

you can try regular yogurt with a little bit of lemon and honey,
but it has to be whipped.

Okay so that sounds really, really good.


I do this thing where I boil sweet potato, carrots and broccoli and then I mash it all together in a bowl with sour cream and cheese. Sounds pretty nasty but it is delicious.
I want to stop boiling my vegetables though because I know that they lose a lot of their nutrients in the water so cooking them stir fry styles seems like my only option

sour cream and cheese and a bit of spice can make almost anything delicious!

Steaming your vegetables is another good option as well. I find with stir frying you need oil or butter or something which is stuff I like to avoid. If I do stir fry, I do it in lemon juice.

Healthy eating is one of my interests. I need goals in everything I do, and I find I take more interest in what I cook if I have a goal in mind, such as eating more veg, or losing a few pounds. I also need a rigid structure in my life, so I always plan my menu for the following week's dinners before I go to the supermarket. I like to mix healthy dinners and a few treats to make life worth living. I don't use recipes.

This week's menu is like this, maybe it will give you guys some ideas:

Monday: bought pizza with homemade toppings. Garlic, oregano, peppers, jalapenos, onions, sweetcorn, with salad on the side

Tuesday: scrambled eggs on wholemeal toast, with salad

Wednesday: homemade tomato soup; finely chop one onion and one red pepper, fry in a little olive oil, add two crushed cloves of garlic and one chopped red chilli, then one large tin of chopped tomatoes, some water and a vegetable stock cube. Heat until bubbling and then add a couple of handfuls of pasta. Heat until the pasta is cooked and then stir in a couple of handfuls of fresh basil. I make garlic bread to go with it by slicing a part-baked baguette vertically and spread each slice with a mixture of olive spread and crushed garlic, wrap in foil and then finish baking. If you cool the soup before adding the pasta you can freeze it.

Thursday: beansprouts, peppers, onions, mangetout, water chestnuts, spring greens, bamboo shoots stir-fried in a little sesame oil, stir in a bought stir-fry sauce and serve with rice (or egg noodles). I choose a stir-fry sauce that is low in salt; soy sauce tends to be high salt.

Friday: cheese and onion pie. Mashed boiled potatoes, sliced onions fried in a little olive oil, and grated cheddar cheese, mixed together. Put the mixture into an oven dish, top with more cheese and sprinkle cayenne pepper. Bake.

Saturday: pasta bake. Mix ratatouille sauce, pine nuts and cooked pasta, put in an oven dish and sprinkle with grated cheese. Bake. Eat with salad. I make my own ratatouille by stewing onions, aubergine, peppers, courgettes and tinned chopped tomatoes with some garlic and dried herbs. There is too much for one meal, so I freeze the extra.

Sunday: dinner at mum's, so I eat what I'm given :D

Ahahaha i know right? gah try and guess the toppings. I touched it after I took it out of the oven and it literally crumbled in my hands.


Tsuyoiko - as odd as it sounds, i've never had tomato soup before but yours sounds absolutely delicious

Is what you call jelly what we call jam? In that case, yes, with caution - scoop out any furry bits.... Seriously, the sugar should preserve it but bin it if it tastes fermented (or put it in the wine bucket! Waste not, want not :) )

limajean - I did that to a baked potato in work once - we had a new industrial strength microwave, I thought I had adjusted the time from my domestic strength one at home and the potato came out looking quite normal but inside it was rock hard charcoal. It didn't do my credibility among the guys any good at all - I was the only woman on the staff! :) I had questions for days about what I was going to cremate for lunch today.

btw - have you thought about risottos? I have a delicious asparagus risotto recipe from a veggie friend - you poach the cut up asparagus briefly and set it aside, make the risotto in the usual way (chop and cook an onion,glaze the rice in the same pan with the onion, add veg stock ladle by ladle, allowing the rice to absorb the liquid before adding the next ladleful, a bit tedious but worth the wait, takes about 35 mins for a single portion) then stir in the asparagus with the final ladle of stock, crumble goat's cheese over the top and serve.

my friend's mom made this for me once using this recipe. I am not a big fan of cake but this is certainly the greatest cake i've ever eaten.

Dear Limajean
In the indefinable act of creation; some can write, others play a musical instrument & a few can cook really well. Let me introduce you to an Italian dish "Piedmont Roasted Peppers".
1. Cut 4 large red, (not green), peppers into halves.
2. Remove seeds, but leave stalks intact to preserve the integrity of the shape.
3. Lay the halves on a lightly oiled roasting tray.
4. Scald 4 medium tomatoes with boiling water & skin them.
5. Cut the 4 tomatoes into quarters.
6. Place 2 tomato quarters into the voids of each pepper half.
7. Add chopped anchovy fillets on top of the tomatoes.
8. Add peeled & sliced garlic cloves on top of the anchovies.
9. Spoon over one desertspoon of virgin olive oil.
10. Season lightly with pepper.
11. Place tray in oven at 350 degrees F, or 180 degrees C.
12. Transfer to a warm serving dish & scatter over some basil.
13. Eat with good crusty bread to soak up the juices.
Its vegetarian, its healthy & its great with a glass of chilled white wine.
If it works out, let me know & I will introduce you to whatever you want: French, Chinese, Thai, Indian, Nigerian, English, Irish. You name it.

Sorry. Time of cooking. 50 minutes to 1 hour to get the juices going & a nutty flavour to the peppers.
