Topic: “It is a measure of maturity, of adulthood, a mark of growing up, to realize there is no sense to anything.”
To what extent is Fotheringham’s remark true in the lives of Pi in Life of Pi and Pearl in The Scarlet Letter?
Strong enough thesis?
Thesis: In the novel’s Life of Pi and The Scarlet Letter, Pi and Pearl undergo constant struggles and changes to survive, which demonstrate character development, a measure of maturity and a realization of the impeccable paradox about the human existence.

Sorry to say that it's rather vague, especially if it's for a university-level paper.
I think what the topic invites you to investigate is the relationship between the process of one's maturing and one's realization of world as an utterly senseless space. You need to develop your current thesis further, either by focusing on the relationship between the demonstration of the character development in both novels through struggles and changes (in what sense do they develop? What is the common essence of their struggles?), or by focusing on the relationship between the "maturity and a realization of the impeccable paradox about the human existence," as you put it (why is that realization a mark of maturity? What is one, having matured through this bleak realization, to do with his existence in a senseless world?). As it stands now, there is no sense of direction to your thesis, not to mention a few technical issues here and there.
One thing you might one to consider is that a thesis doesn't have to be a single sentence. As long as you connect each and every sentence as a whole, it can function as your thesis statement just as well. In fact, with complex topics and ideas, this is perhaps the most suitable way to present a thesis with all the depths and issues it should explore.
