Will someone please explain what Winston means when he says that he has not betrayed julia, even though he has told everything they have done together, and all the crimes the have committed, etc ?

Winston has not betrayed Julie yet, he is still true to her in his heart (even though it is not love). He thinks about her often, and he is concerned about her, and if she is okay.
A major point of trying to change Winston is to break his loyalty to ANYTHING besides Big Brother. You can not "love" Julia, and love Big Brother at the same time. So OBrian will try and break this connection, and in the end he will, then Winston will have to betray Julia. This is why marriages are looked down upon, seeing as though there is the possibility of you becoming loyal to your spouse too, and not Big Brother.
In the end, he tells them to take Julia, and that Julia is responsible, to hurt Julia, etc, etc. That is their idea of betrayal.

It is declared by Julia (in chapter 7, part 2) that she and Winston should not betray each other in their minds because only that intention will allow their love to remain true.
