Same thing that would happen if they were caught just being together. Except maybe they'd get doused with cold water first.

Well, they do get caught. Remember also that the only crime is thoughtcrime, so the adultery aspect is nullified when compared. The crime they commit isn't the sexual encounter, it is having feelings for one another. It is thinking about one another.

I don't think that the charges would be any different because either way he might be vaporized for the act itself.

It says earlier in the book, that those who commit thought crime are sent to the dungeons in The Ministry of Love. Winston recalls stories and such of people being tortured until they confess. I believe that if the two are caught, they'd be sent to the Ministry of Love, and most likely be torutured untiul they confess, unless, that is, they commit suicide first to avoid the turture.
