I believe I once read a book called "What is literature and what is it good for", but I can't remember the author.
Otherwise I think you might find some answers in "Literary Theory - a very short introduction" by Culler or in
"New literary histories" by Colebrook or
"A Readers Guide to Comtemporary literary theory" By Selden and Widdowson
