Well there's a story by Albert Camus called Jonas, L'artiste au travail or something like that. I don't know what it translates into in English, but it's in Camus's The Exile and the Kingdom.
Kafka also wrote one that has a title with the word hunger in it if I recall correctly, but I haven't read it. You should be able to find it in almost any Kafka short story collection.
There is a short story called A Hunger Artist by Kafka, though i don't remember if the artist starves himself to death. I think in the end of the story, we find out that just hadn't eaten anything that he liked, though i could be wrong.
