Essay writing recommendations?

I was just wondering if anybody could recommend any books for English undergraduates that focus on ways to structure essays. What to do, what not to do kind of thing. Any suggestions?

Are you talking about academic essays or creative non-fiction essays? For academic essays, I like Dianna Hacker's Rules for Writers -- it's practically an industry standard in the US (and for good reason). For creative non-fiction essays, there is a lot more flexibility. You might try the book Bird by Bird for some inspiration.
