i'm not exactly sure what you're asking for, but the white bone is a stream of thought from an elephant. very moving book, bit preachy
SF would be the obvious answer, but, as I think you're talking about real-world animals, I've always felt Flowers for Algernon was as much about Algernon as about Charles. You can really see Algernon (a mouse)'s thoughts mirrored as Charles', and the other way around.
