    escargo (not sure of spelling and yumm on the crawfish etoufee, there is a restaurant here named Bourbon Street and they have really good crawfish etoufee)

    olive oil --- just add a 't' to the end and its right. I lived in Louisiana for several years, and there is nothing like a good plate of etoufee. I decided to go with your spelling on the invertebrate.
