I know religion is used in this book as a source of symbolism but I have to write a paper on how religon plays such a little role in the lives of the characters. I know the obvious answers are adultery, obsession with material objects, etc. I am looking for more in depth religious topics that I can go with as well as the obvious ones... any help would be appreciated.

I don't think religion had anything at all to do with "The Great Gatsby." Trying to analyze the novel from a religious standpoint would be a waste of time IMO.
